Moving Toward a Sustainable Food System at UT Austin
In summer 2016, Veronica Gonzalez, Texas PSR’s summer intern and a University of Texas at Austin student, studied the university’s food purchasing system. Her study concluded that UT Austin is making strides in sustainable food practices in a commercial food service setting, despite the challenges of huge daily food production and vendor participation.
